Ingredients:
6-7 large ripe tomatoes
2 cloves garlic (minced)
3 tbsp ground cumin
2 tsp salt
1/2 tsp pepper
1 tsp oregano
1 tbsp honey or agave nectar
Directions:
Dice tomatoes and simmer with garlic on low in a pot
for at least 6 hours, stirring occasionally.
Let mixture cool, then blend in a blender until it has a
sauce consistency.
Put sauce back into the pot, and add remaining ingredients.
Simmer on low for at least an hour.
You are ready to prepare your enchiladas now!
